Irizake is an ancient Japanese seasoning made by adding ingredients such as bonito flakes and plum vinegar to sake.
The umami flavor of bonito and the subtle sourness of plum spread throughout your mouth.
It is less salty than soy sauce and can be used in a wide variety of dishes.
