Ingredients (serves 2)
- 2 taro roots
- Carrots - 50g
- 1 piece of fried tofu
- 4 small dried shiitake mushrooms
- 150ml soy sauce
- 1 tablespoon simmered seasoning
How to make it
STEP 1 Peel the taro and cut it into 4 pieces. Immediately rinse in water and drain in a colander. Cut the carrots into irregular pieces and parboil. Pour hot water over the fried tofu to remove excess oil, then cut into 1cm pieces. Soak the dried shiitake mushrooms in water until soft and then cut off the stems.
STEP 2 Place the ingredients in a pot, add the soaking water from the shiitake mushrooms and the simmering seasonings, and heat over high heat.
STEP 3: Once boiling, reduce heat to medium, cover and simmer for approximately 20 minutes.
